I read somewhere or was told by someone the history of Oyster Rockefellows started with snails....or I should say the lack of them. In the beginning there was escargot...with the lack of these tasty little morsels...the eye was turned to the oyster. Most would say now...a great replacement! With a little creativity oysters began a beautiful love affair. New Orleans is so known for the rich flavor of the oyster but none as famous Oysters Rockefellow...named because the dish is as rich in flavor as the Rockefellow's bank account.

That quote can apply to snail too!
